In August Zeus battled some stomach issues and dropped some serious weight. We’re talking 10 pounds! Most of me was really sad/scared that he lost 10 pounds in 5 days. But…a tiny part of me is jealous, seeing as he is now back to chasing shadows, suckling toys and keeping his food down.
Which is to say, Zeus is better and this dog mom is happy the big pit in her stomach has finally eased. Thank goodess too, because I kept waking up in the middle of the night worried about any number of Zeus-related things.
Question — am I the only puppy mom who has nightmares when their furbaby is sick?
Also, I have decided the next time I get sick, I’m going to get sick like a dog. I’m going to occasionally have bouts of losing my food followed by moments of playing, cuddling, and begging for all the things I shouldn’t have when I’m sick — like cheese.
Because if your fur baby is anything like mine, he loves cheese. Get out a brick and he’s in the kitchen. The same is true of carrots, broccoli, Brussel sprouts, and cauliflower. Which is a roundabout way of saying, Cauliflower Waffle night is one of Zeus’ favorites. Luckily for him, it’s one of ours too.
If you’ve ever dabbled with waffle iron hash browns, this cauliflower waffle recipe is very similar — in that you’re utilizing the waffle iron’s ability to create all kinds of crispy edge goodness. Waffling some cauliflower and cheese first came on my radar during a failed dinner attempt with Melanie and Jed. (I totally blew it by overscheduling. But we eventually got together and had some cauliflower goodness. So, all is right in the world.)
In the last eight months we’ve probably had cauliflower waffles almost two-dozen times. Because they’re low carb. And they can be topped with all kinds of Mexican toppings (Garrett’s favorite). And they’re just darn good.
But really, you could serve them as is. You could have them with an avocado dipping sauce. You could just put a fried egg on top. You could not share them and keep them all for yourself. Really, the options are endless.
What follows is the proportion we like best. I’ve dabbled with different kinds of flour, but I keep coming back to almond. I think it has the best texture and flavor. Cornmeal’s a good substitute, though it doesn’t have the same protein kick. And though I generally love the Kodiak Cakes mix, it was too gummy in this instance.
Mexican Cauliflower Waffles
Makes 8 – 12 Belgian-Sized Waffles
Making the waffles can be a bit of a messy endeavor. To keep the waffle iron as clean as possible, use a generous amount of cooking spray. I’ve also found that fully loading each square makes a big difference.
Furthermore, you’re going to want them on the crispier side before you take them out or else they’ll break. I’ve made this in two different waffle irons. With both it took a substantial amount more time than the waffle iron thought. If you try and open them too soon, don’t freak out. Just close the lid and wait. All the cheese will ‘heal’ the waffle. It’s pretty hard to mess up…just my kind of recipe!
Last tip, I really like white cheddar with these. But you can use pretty much any good melting cheese you want. We specifically use Darigold’s Sharp White. While I’d long been an avid fan of another delicious cheese, we’ve found that Darigold offers the same awesome flavor and melting ability at a fraction of the cost. PLUS – they’re local! Which always makes me feel good. They’re homebased right here in Issaquah.
2 generous cups of shredded cauliflower
1 cup of shredded white cheddar
2 TBS chopped garlic
½ cup almond flour
Salt and pepper to taste
Combine all ingredients in a large bowl and stir until thoroughly mixed. Heat a waffle iron to medium. Generously spray the waffle iron with non-stick cooking spray. Add a heaping ¼ cup of the mixture to each square. Close lid and wait until waffle iron beeps at you. Keep cooking for a few minutes more and the check.
Sautéed bell pepper and onions
Assemble with your desired selection. Serve warm.
